Observed raw beef patties in upright refrigerator at 46-47*F. Cold hold of food to be at 41*F or lower during storage. As per the person in charge, patties had been in the refrigerator all morning. Advised staff to monitor cold hold temperatures using a metal stem thermometer. Corrective Action: Corrected at time of inspection. Hamburger patties were embargoed and discarded.
