Observed various types of raw fish in the walk-in cooler by the 3-compartment sink with internal temperature in the range of 58-62°F. Ambient temperature measure via min/max thermometer is 64°F. Informed person in charge (PIC) that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC stated the walk-in cooler was working in the morning (less than 4 hours ago). All TCS foods improperly cold held were relocated to the other walk-in cooler to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
