Corrective Action: Corrected at time of inspection. Employee wearing gloves touched their clothing and continued to handle food without washing hands. Employee left kitchen and returned from outside and put on gloves to handle clean equipment without washing hands. Had employee wash hands. Employee handling food in the pizza-make cold table (where bare-hand contact is allowed) went to the salad-make cold table (where bare-hand contact is not allowed) and picked up cheese with their hands without washing hands. Had employees wash hands. Manager discarded the cheese that hand been touched.

Observed TCS (time and temperature controlled for safety) items such as cut tomatoes, pepperoni, deli ham, sliced meatballs, sausage, and cheese in the pizza make table with internal temperatures of 46-53*F when measured with a probe thermometer. According to manager, ham, meatball, and cheese were in the unit for more than four hours. Those items were discarded, and all other items that had been placed in the unit less than 4 hours ago were added to the time as control policy. All TCS food under cold holding must maintain internal temperatures of 41*F and below. Corrective Action: Corrected at time of inspection.
