Observed back food prep table in state of disrepair, exposed wood with cracks, crevices, and projections. Discussed materials that are used in the construction of utensils and food-contact surfaces of equipment shall be durable, corrosion-resistant, and nonabsorbent; sufficient in weight and thickness to withstand repeated warewashing; finished to have a smooth, easily cleanable surface; and resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition. The person in charge discontinued use of the prep table and placed a replacement order. Corrective Action: Correct prior to next routine inspection.

The person in charge directed staff to manually portion sanitizer and placed a work order for the dispenser at the time of inspection.

Observed wiping cloths stored in chlorine saniter solution greater than 200ppm chlorine concentration. The person in charge discarded the sanitizer solution and placed wiping clothes in sanitizer solution with 50-100ppm chlorine.
