Inspector's notes
Observed cooked aciento (rendered pork lard paste) with internal temperatures between 46F -51F in a reach in cooler. Observed packages of cheese products with internal temperatures between 45F -50F in the dairy/deli meat case. The person in charge stated the food items had been stocked into the reach in cooler and case less than 4 hours ago and moved them into the walk-in cooler for rapid cooling. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed reach in cooler used to store TCS aciento with minimum ambient internal temperature of 50F. Observed the top section of a dairy/deli meat case with minimum ambient internal temperture of 48.5F. The person in charge discontinued use of the reach in cooler and had it serviced at the time of inspection, discontinued use of the top section of the dairy/deli meat case and placed a work order for service.
