#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed the front counter reach-in cooler with internal food (tuna salad, deli meat, sliced tomatoes) temperatures of 51*F-55*F using probe thermometer. Also observed the reach-in under the microwaves with internal food (cooked pasta, sour cream) temperatures of 46*F-49*F using probe thermometer. The foods were placed in the cold holding units from the walk-in cooler about one hour prior. Person in charge (PIC) opened a work order at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed the chicken salad in the walk-in cooler between 49*F-54*F. The Containers of chicken salad had just been prepped and had lids on each container. Discussed uncovering the containers until the food has reach in internal temperature of 41*F or lower. Also observed the deli meat being sliced into pre-portioned packages. The meat had an internal temperature of 60*F-63*F. Each portion was tightly wrapped in deli paper, trapping in the temperature. Discussed with person in charge (PIC) that the freshly sliced deli meat needs to cool to proper cold-holding temperature before wrapping. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered to allow for rapid cooling. Corrective Action: Corrected at time of inspection.
