Prior to the next routine inspection, please install backflow prevention rated for low-hazard, continuous pressure connections, such as a double check valve assembly (DCA) or pressure vacuum breaker (PVB) that is placed at least 12 inches above the highest point of downstream piping.

Observed bags of cheese cubes and a dairy-based corn dip thawing at ambient temperature. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Person in charge (PIC) moved items to the refrigerator to continue to thaw. Corrective Action: Corrected at time of inspection.

Observed an accumulation of grease and food debris on the handles of the combi ovens and the cabinets adjacent to the ovens. Discussed cleaning frequency of non-food contact surfaces with PIC. Nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Corrective Action: Correct prior to next routine inspection.
