If cooling from ambient temperature, food must be cooled from ambient temperature to 41'F in 4 hours.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed the following TCS food items being stored in large cambros in the cold wells of the main prep table adjacent to the register, and in the bottom portion of the prep table: Cut tomatoes(48'F) and cut lettuce(49'F). Per PIC, the lettuce and tomatoes were prepared and placed in the prep table around 7 hours prior to time of inspection. Discussed proper cold holding with the PIC. Discussed proper food storage to allow for adequate air flow in cold holding units. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
