Inspector's notes

Observed PIC wash hands for 9 seconds at time of inspection. Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Employee properly washed hands at handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Observed multiple(7+) bags of chicken in the thawing process being stored in a prep sink with stagnant 91'F water at time of inspection. Discussed proper thawing methods with PIC. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. PIC ran cool running water over the thawing chicken at time of inspection. Corrective Action: Corrected at time of inspection.

No food was observed within the device at time of inspection. Thawing cabinet was operating at 64'F at time of inspection. PIC stated she was unsure how to reprogram the device or how the temperature cycles worked. Discussed with PIC about using a specialized process and equipment to thaw food products requires a variance. Establishment does not have an approved variance for this process. Establishment must either: submit for a variance for the equipment or adjust programming of equipment to only function at 41'F or below and provide letter stating equipment will only be used in this manner.
