Observed prep table holding TCS food products such as cut lettuce and diced tomatoes operating at an ambient internal temperature of 53.4'F via min/max thermometer at time of inspection. PIC stated that the issue began today, about 1 hour prior to inspection. TCS food items held within the unit were moved to alternative refrigeration at time of inspection. PIC will discontinue use of the prep table until it is repaired and maintaining TCS foods at 41'F or below. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. A reinspection will occur on or prior to 6/24/2025 to verify the correction. Scheduled final construction inspection on 8/18/23.Please address the following items prior to the final construction inspection:1. Provide a micro-switch operate air curtain over the delivery door as this door will remain open for long period of time during delivery.2. Provide a hand washing sink in the food prep/ ice machine area as planned. Sink must have hot and cold water and side splashguards.3. All sinks must have hot and cold water. 4. Hot water must be at 110*F or higher and available at point of service within 45 seconds. Tempered water at lavatories and hand sinks must be at 95*F or higher.5. Provide 1” air gap from the finished grade for drainpipes from the blenders’ drip tray, ice machine, walk-in units, 3-comp sink, dump sink and food prep sink.6. Provide a hub drain for the drainpipe from the blenders’ drip tray. 7. Water lines must be above drainpipes. Drainpipes must be at least 6 inches from the finished floor. Noted the water lines for the hand sink and dump sink at the front service area is very closed to the floor. Please elevate the water lines and drainpipes.8.
