Forty-six prepped pepperoni pizzas on two separate speed racks with no set discard times. Timers were present on racks with one not working and the other not in use. The PIC stated the time is mentally tracked ranging from 3.5 hours ago to 20 minutes ago. The PIC discarded the food items-see embargo form. All food items on time as a control shall be marked or otherwise identified to indicate the time of discard following internal policies not to exceed four hours.
