Observed spray bottles of quaternary ammonia sanitizer pulled from wall dispenser with a concentration at 500+ ppm. Observed employee utilizing spray bottle to wipe down prep tables. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. PIC emptied all sanitizer spray bottles at time of inspection. PIC states they will contact the chemical company to have wall dispenser calibrated. Corrective Action: Corrected at time of inspection.

This was not observed during the visit. Discussed following the manufacturers guidelines for use of the product to ensure food contact surfaces are adequately washed, rinsed, and sanitized. PIC indicated they would discuss procedures with staff.

Observed employee cleaning the cookline and then wipe their hands on their pants and immediately handle tongs to serve a customer chicken from the hot case. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. PIC indicated they would have a meeting with all staff concerning proper hand washing and when to wash their hands. Corrective Action: Corrected at time of inspection.

The label indicates that it can be used in concentrations of 150 ppm or 400 ppm quaternary ammonia. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. PIC replaced all the bottles with 200 ppm quaternary ammonia and indicated they would call Ecolab out to adjust their dispenser. Corrective Action: Corrected at time of inspection.
