Observed wiping cloths stored in 2 sanitizer buckets/containers with quaternary ammonia sanitizer with a concentration of <150 ppm. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Person in charge indicated they would swap the sanitizer in all the buckets when they had time to do so. Corrective Action: Correct prior to next routine inspection.

Core-3-304.14, C: Wiping Cloths, Use Limitation>>>Observed a wiping container with sanitizer under the espresso machine; the sanitizer had a concentration of 0 ppm. Person in charge indicated that their chemical dispenser is dispensing at a lower concentration than normal (150 ppm); inspector suggested that until the chemical dispenser is recalibrated the establishment must replace the sanitizer more often. Person in charge instructed employee to test/replace the small sanitizer containers at a greater frequency due to less sanitizer being used. Other wiping buckets had 150 ppm of sanitizer.
