Observed a fresh Pico de Gallo salsa cup that was cold holding in a grab and go display case near the front of the store. The internal temperature of the Pico de Gallo salsa as measured using a probe thermometer was at 48°F. According to the person in charge, the Pico and other salsas and TCS foods had been in the display case for less than 4 hours. The TCS foods were transferred from the case to the walk-in cooler to rapidly chill down to 41°F. A min-max thermometer was placed in the display case and allowed to stabilize for 25 minutes. The air temperature was holding steady at 49°F. Discussed with person in charge to reach out to a technician to service the unit and to utilize other nearby cold holding units to hold TCS foods such as salsas and sandwiches until the unit is repaired and/or replaced. *2ND CONSECUTIVE PRIORITY VIOLATION.* Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed a cooked rotisserie chicken that was cold holding in a tiered display case with an internal temperature as measured using a probe thermometer of 50°F. In discussion with the person in charge, the rotisserie chicken had been in the display case for more than 4 hours and was embargoed at time of inspection (see embargo form). It was observed that the rotisserie chicken was stacked high in the display case and was sitting above the stack line for that section of the case. Discussed with person in charge to keep the food stored at or below the maximum fill line on the unit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-5-202.13, P: Backflow Prevention, Air Gap Observed sprayer arm faucet in three compartment sink with a broken coil. Sprayer arm observed hanging below flood rim. Sprayer arm must be at least one inch above the flood rim of sink. Per PIC a work order has already been placed for the sprayer arm. A reinspection will be conducted on 11/6/2023.
