Observed a handwashing sink next to the 3-compartment sink that was filled with dishes. Discussed with person in charge that handwashing sink is for handwashing only. PIC relocated all items blocking handwash sink at time of inspection. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Corrected at time of inspection.

Observed several dishes stored as clean with visible food residues stuck to the dishes, such as a chopper with food residue in the grid pusher part and other bowls and plates with dried food residue on the dishes. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. All food-contact surfaces must be cleaned to sight and touch. Inspector's notes

Observed multiple different bags of fresh fruit and dairy-based purees, such as strawberry, coconut, mango, pineapple, tamarind and vanilla in the walk-in cooler with various dates, ranging from 2/20 up to 5/16 in the walk-in cooler. According to the person in charge, they are frozen and then thawed out for use. According to the person in charge, it was unclear how long the bags of fruit purees had been in the walk-in cooler and the fruit purees were embargoed at time of inspection (see embargo form). Observed that the date marking sticker has a section on it to write the date that the fruit puree was pulled from frozen. Discussed with person in charge to utilize this and mark the date when it was thawed and put back into rotation. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
