Also observed pene pasta cooling in deep plastic container in walk-in cooler with an internal temperature of 48*F. Pasta was moved to shallow pan at time of inspection.

According to PIC, foods were previously moved from walk-in cooler to prep table within 1 hour prior to inspection. Walk-in cooler was holding ambient air temperature of 41*F at time of inspection. All foods were moved to walk-in cooler to rapidly chill. Please maintain food levels lower than the max fill line to prevent increase in temperatures.
