According to the establishment's label, the frozen foods are held for 9 days once taken out of the freezer. Day one starts the day that TCS foods held in refrigeration at 41F and can be held for a total of 7 days at 41F. For example, corn dogs removed from the freezer on 8/8 should be discarded by 8/14. The establishment's labels show a discard date of 8/16, 2 days longer than the Food Code requirement. Please update the information in the label maker to be in compliance with the FDA Food Code date marking requirements.

2ND CONSECUTIVE Observed the dairy based soft serve mix cold holding in the bottom of the machine/dispenser with an internal temperature of 47-52F, probe thermometer, verified by PIC. According to PIC, the soft serve machine stopped maintaining 41F or less the day prior to the inspection. PIC discarded the soft serve, see embargo form. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
