In the cold table reach in next to the office, observed a small tray of preportioned cooked rice and a small tray of preportioned cooked pasta with an internal temperature of 46-50 degrees F. Person in charge (PIC) stated items have been in unit overnight. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection. Sliced turkey, cheese, dressings, cut tomatoes stacked high above the rim of pans in the top of the cold table at 44*F to 52*F internally. Employee stated they had been stored as such less than two hours and moved them to the walk-in to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
