Person in charge stated items have been in unit over 4 hours prior to inspection and voluntarily discarded. Chef stated food was used to prep foods within 2 hours of inspection and was placed in cold holding unit to cool. Chef placed food in blast chiller for cooling to 41*F within 30 minutes and will ensure staff use proper containers to properly fit below fill line.
