Observed the following food items cold holding in the main reach in unit that was currently holding >41 deg F and later returned to within specification, PIC informed this food items had been holding in unit since the night prior at internal temperature of 48-52 deg F and discarded beef rolled and regular tacos, cooked fish, pork carnitas, chili rellenos, and tamales.
