Observed the following food items cold holding at internal temperature of 49-52 deg F in a reach in unit that was holding >41 deg F. Mixed greens, blue and goat cheese, and shredded cheddar, and arugula and spinach, Ahi and poke tuna. Manager informed all food items were placed in walk in from earlier in day and placed back in walk in. Ahi, spinach and arugula was discarded. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed various types of cooked pasta and cooked green beans with an internal temperature range of 46F-50F located in the walk-in cooler. Per PIC, the cooked pastas and green beans have been in the walk-in for over 4 hours; and it was found that the soup and green beans cooling under the pasta heated up the foods above it, pushing the food items out of cold holding temperature range. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
