Food handler stated that food items will be discarded in one hour if not will be fried again and served. Discussed previously the agreement was to only hold pre-cooked french fries for no longer than 20 minutes and Active Managerial Control should be used to correct this issue.

Observed employee handle raw burger patties, change gloves without washing hands and continue to work with ready to eat burger buns. Instructed employee to remove gloves and properly wash hands before continuing work with ready to eat foods. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.
