Observed Low temperature dishwasher to not produce sanitizer at time of inspection at 0ppm of chlorine. Dish machine must test between 50-100ppm. Store manager stated the establishment can function at full capacity without dishwasher and washing via 3-comp sink until fixed. Corrective Action: Corrected at time of inspection.

Observed cooked carnitas, chicken, barbacoa, carne asada, sofritas, and queso with a temperature between 105-125F in the center hot holding unit for the to-go station. The PIC indicated the products were placed in the hot holding device an hour prior to inspection. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 135°F or higher. The PIC had the food products reheated to 165F before placing it back into the unit. Correct By: Corrected At Time Of Inspection
