Observed active warewashing at 3-compartment sink. Dishwasher observed cleaning and rinsing food contact surfaces but no sanitization step after cleaning. Reviewed proper warewashing procedure with PIC at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces were properly sanitized at time of inspection. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. Food-contact surfaces sanitized using chlorine sanitizer must be sanitized with a contact time of least 10 seconds. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed non-pasteurized pooled eggs, sausage patties, and diced tomatoes with temperatures between 46 to 50*F in the prep table in the back of house at time of inspection. Per employee, all items were placed in prep table less than 2 hours prior to inspection. All food items were moved to the reach-in cooler to rapid cool at time of inspection. Observed ambient temperature of the prep table at 45.8*F at time of inspection. Establishment has multiple working reach-in coolers on the premises at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
