Observed numerous deli containers of ready-to-eat time-and-temperature control for safety (RTE/TCS) foods, including cooked peppers and onions, roasted red pepper aioli, and horseradish cream sauce, in the walk-in cooler with prep dates ranging from 5/1 to 6/1, more than 7 days prior to the inspection. Confirmed with person in charge (PIC) that these prep dates are correct. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). PIC voluntarily discarded the items to correct during the inspection - see embargo form. Corrective Action: Corrected at time of inspection.

E&D, class 3 10+Final construction inspection was conducted with the site superintendent, Dean Meintjes. Construction has been completed. The establishment is not open and operating.This is a warming kitchen. There is no hood in the kitchen. Self-contained combi-oven, steamer, dishwasher, hot/ cold holding equipment. Water connections for coffee/ tea brewer were provided but the equipment are not connected at the time of inspection. If the establishment will install a reverse osmosis system, a reduced pressure zone assembly (ASSE 1013) will be required upstream from the water connection of the filter system. Conduits and fittings after the backflow preventer must be PEX or stainless steel only. No copper or brass alloys is allowed downstream from the backflow preventer. The testable backflow devices must be certified, and report must be maintained on site. Permit is approved.Please address all items noted in the report before the routine inspection:1. Provide rigid drainpipe for the drain from the dishwasher. PVC or metal is acceptable. Ensure there is minimum 1” air gap from the finished grade and end of the drainpipe. 2. All water lines must be above drainpipes and drainpipes must be at least 6 inches off the floor.3. Storage racks, equipment or worktables must be at least 6 inches off the floor.Report is auto mailed to owner and sent to the superintendent.A copy of the inspection rights is attached to the report.No County legal action will result from this inspection.This establishment/operation has demonstrated sufficient compliance to proceed with the issuance of the permit. To complete the permitting process, issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Fees paid up to this inspection approval do not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Certify all testable backflow devices inside the kitchen and provide reports.2. All shelving in storage must be 6 inches off the floor.3. Fill gouges, cracks, saw cuts, etc. on the concrete floor inside the dry storage room. Seal the concrete after filling.4. All sinks must have hot and cold water.5. Hot water must be at 120*F and available at point of service within 45 seconds. Tempered water at hand sinks/ lavatories must be at 95*F or above.6. Exterior and restrooms’ doors must be self-closing.7. Provide door sweeps and weather stripping at all exterior doors.8. Rodent seal all exterior pipe penetrations into the building.9.
