Inspector's notes

Observed recently baked sweet potatoes and regular baked potatoes, cooling in the reach-in cooler on the cook-line. According to employee, the potatoes began cooling in the walk-in 3 hours prior to inspection. Employee placed the cooked potatoes into the walk-in to rapidly cool to 41F. The Food Code provision for cooling provides for cooling from 135F to 41F in 6 hours: 135F-70F in the first 2 hours; 70F-41F in the next 4 hours. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. The following tcs foods were place into the unit 3 hours prior to inspection start time: cut lettuce at 45*F-50*F; cut tomatoes at 55*F; American Cheese at 55*F; swiss cheese at 55*F; medium full container of raw hamburgers at 57*F. PIC directed employees to move products to main walk in to cool to 41*F.
