Observed chicken wings in the hot case at 125-130 Deg. F. Per operator they were placed in the unit aproximately 2 hours prior. The product was reheated to 168 Deg. F. at the time of inspection. Suggest maintaining the unit at a higher temperature to assure that Time Temperature Control for Safety Foods (TCS) maintain at 135 Deg. F. or above. Corrective Action: Corrected at time of inspection.
