Observed tuna salad and chicken salad in a prep table near the server station with temperatures between 52 to 60*F at time of inspection. Per person in charge (PIC), both items were placed into the prep table less than 4 hours prior to inspection and were moved to walk-in cooler to rapid cool. Observed cut cantaloupe, honeydew, pre-portioned salsas, milk, sour cream with temperatures between 49 to 54*F at time of inspection. Per PIC all items were in the reach-in cooler longer than 4 hours prior to inspection and were embargoed at time of inspection. Observed two door reach-in cooler with an ambient temperature of 56.3*F at time of inspection. Establishment has multiple working coolers which are able to keep TCS food items cool at 41*F or below at time of inspection. PIC stated they will discontinue use of the cooler until it is able to keep TCS food items at 41*F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
