Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Corrective Action: Correct prior to re-inspection on 4/8/26

Predefined Comment: No County legal action will result from this inspection.Strongly recommend adding a hand-washing sink in the front deli area. There is currently only one hand-washing sink in the back area where raw chicken is handled. Discussed the prevention of cross-contamination when the faucet is turned off. Discussed adding drain grate sieves to floor sinks, cleaning behind equipment, and removing garbage from this area more frequently.

Inspector's notes

Packaged hummus, deli salads, and various cheeses were observed sitting in a shopping cart outside the walk-in cooler at 52F. Per person in charge, the food was delivered 1.5 hours prior and not placed into the walk-in cooler. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed deli slicer with accumulation of dried up deli meat on food contact surfaces. According to PIC, slicer had last been used day prior to inspection. Also observed deli slicer covered with plastic bag with dried up food debris on food contact surfaces, employee stated slicer is not in use. Please maintain a regular cleaning schedule of 4 hours to prevent accumulation of debris. Discussed using cleaning logs or timers. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection.
