Observed butter, cream cheese, salads, sandwiches, yogurt, etc., cooling with an ambient temperature ranging 44-50*F in open display refrigerated case. Person in charge stated foods were placed in unit within 2 hours of inspection and voluntarily discarded on own accord. Ambient temperature of unit was at 44*F. Work order was placed on unit. Refrigerators should be held at a temperature of 41*F to hold temperature-controlled foods. All foods to be held in neighboring units until maintenance is completed and refrigerator can hold an ambient temperature of 41*F or below. Correct By: Correct Prior To Next Routine Inspection

Soup in steam table, with an internal temperature of 120*F. All hot temperature controlled foods should be held at 135*F or above. Person in charge stated food was placed in unit at an internal temperature at least 135*F within 2 hours prior to inspection and voluntarily discarded on own accord. After discussion with the person in charge, it has been determined that the root cause of the violation was the container of food restricting direct contact with heat, which resulted in the violation.
