Inspector's notes
Observed 4 containers of cut tomatoes, 8 containers of cut lettuce, chicken strips, 3 containers of egg rolls, 2 containers of spicy chicken breasts, 3 containers of chicken breasts, and diced chicken ranging from 44*F to 51*F in the walk-in refrigerator. Ambient temperature was 37.5*F using min/max thermometer. Per the person in charge all food items were in the walk-in for at least 6 hours. Corrective Action: Corrected at time of inspection.

Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
