Discussed with the person in charge to reseal the three compartment sink with caulking so that the sinks are smooth and flush to the wall. Person in charge will reseal the 3 compartment sink and handwashing sink. All equipment must be maintained in good repair at all times. Observed sliced turkey, sliced ham, sliced salami and tuna salad at the sandwich prep unit with internal temperatures as measured using a probe thermometer of between 49°F-50°F. Per the person in charge, the meats had been prepped and placed into the unit approximately 1 hour prior to the start of the inspection. The meats were removed from the sandwich prep unit and returned to the walk-in to rapidly cool to 41°F. After preparation, foods should be cooled down to 41°F inside the walk-in prior to bringing the food out to the sandwich prep unit. Please ensure that foods are cold holding at 41°F or below.
