25ppm Chlorine concentration for mechanical dishwasher observed via chlorine test strip at time of inspection. Ensure mechanical warewashing equipment is sanitizing between 50ppm to 100ppm Chlorine. Operator proceeded to place a work order for mechanical warewashing equipment and set up manual 3-compartment sink for adequate warewashing: wash, rinse and sanitize. Sanitizing concentration at 3-compartment sink verified at 100ppm. Corrective Action: Corrected at time of inspection.

Observed low-temperature chemical warewashing machine dispensing chlorine sanitizer below 50ppm. Chlorine sanitizer solution shall be between 50-100ppm. PIC put a work order in at time of inspection. PIC agreed to not use unit in question until it has been fixed and establishment will wash food contact surfaces at 3-comp sink prior to having unit fixed. Reinspection scheduled on 07/18/24. Corrective Action: Correct prior to re-inspection.
