Inspector's notes

Observed cold brew made from grinded beans in process of steeping in room temperature water stored on counter. Per person-in-charge (PIC) and written establishment policy, cold brew is steeped in cold water under refrigeration. Cold brew started steeping two hours prior and was relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed active warewashing at the 3-comp sink with a chlorine sanitizer solution reading below 50ppm. PIC drained sanitizer and made a new solution reading 50ppm at time of inspection. All dishes were cleaned and sanitized with new solution at time of inspection. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Chlorine sanitizer shall be within concentration ranges of 50-100ppm. Corrective Action: Corrected at time of inspection.
