In the walk-in cooler, observed tomato pizza sauce/74F stored in a covered, plastic container over 12 inches deep. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. The sauce was within safe cooling time parameters and was transferred to shallow containers. Ice wands were added as well. Cooling to 41F from ambient temperature must be completed within 4 hours. Corrective Action: Corrected at time of inspection.

Inspector's notes

In a prep cooler/55F on the line, observed TCS food holding at 50-59F including cut tomatoes, various cheeses, sliced ham, cheeses, etc. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown which resulted in the violation. All TCS foods improperly cold held were discarded by PIC at time of inspection. The PIC immediately scheduled repair service for the unit. Staff will set up ice baths and use the other properly operating refrigerators. Staff will not use the unit until it is working properly. See Embargo. Corrective Action: Corrected at time of inspection.

In the walk-in cooler, observed ready-to-eat TCS food held more than 7 days including a roasted pepper mixture prepared 11/4 and hard boiled eggs stored in a container of water prepared 11/2. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). The pepper mixture and hardboiled eggs were discarded by PIC at the time of inspection. Datemarking procedures were reviewed with staff. Corrective Action: Corrected at time of inspection.

Cool TCS rapidly from 135F to 70F within two hours and then to 41F with the total time not exceeding 6 hours. The alfredo sauce was voluntarily discarded by staff. Cooling procedures were reviewed.
