Inspector's notes

Observed TCS rice noodles on the cookline in a container at 76*F at the time of inspection. Also observed milk 53*F in mini fridge up front at the time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, rice noodles are used within two hours and put in the stand up cooler at various times between use. Recommended using time as a control in a situation like this and PIC agreed to using time as a control moving forward. PIC properly time stamped the TCS rice noodles at the time of inspection and will discard after 4 hours, time as a control written procedures provided to PIC. Per PIC, TCS milk had been out of temperature for less than 4 hours and was put back in refrigeration unit at the time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed TCS broth cooling in tightly covered deep pots greater than 4" at the time of inspection in stand up cooler. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Per PIC, broth was cooked two hours prior to the time of inspection. PIC was instructed to use an ice bath or place broth in containers 4" or less at the time of inspection. Corrective Action: Corrected at time of inspection.
