Inspector's notes
Observed an ambient air temp in the large prep cooler at 46*F when measured with a min/max thermometer. Inside the cooler, observed TCS foods holding between 51-55*F including cut tomatoes, dolmas, cut lettuce, feta cheese and hummus. PIC stated all foods were placed nito the cooler between 10-11am, before opening. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Advised PIC to store only non-TCS foods in the prep cooler until repairs can be made. Corrective Action: Corrected at time of inspection.

Observed cooling steak shawarma in the drawer cooler the PIC measuring 57-60*F. Per PIC, the meat had been shaved at approximately 12pm and placed into the cooler. Discussed with PIC that drawer coolers and prep coolers are not approved to cool TCS foods are are only designated to hold previously cooled TCS foods. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. PIC had the shawarma moved to the walk in freezer in a thin layer to rapidly cool at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed cooked chicken in two covered metal containers in the cooler drawer under the cook top with an internally probed temperature range of 69 - 58 degrees F. PIC stated items were prepared about an hour prior. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. PIC relocated items to the walk in cooler to cool to 41 degrees F. Corrective Action: Corrected at time of inspection.

Observed a scoop and a spoon used for shaping falafels near flattop stove being stored at ambient temperature in a metal container of water. PIC took the container of water and tools to the 3 compartment sink to be washed. Discussed other options for utensil storage with PIC. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Corrective Action: Corrected at time of inspection.
