Observed two cooking spoons with food residue, stored on a paper towel on the ledge of the hand wash sink, for use of stirring foods actively cooking on stove. In use utensils should be stored in an area that reduces the risk of contamination. No food or food contact surfaces are to be stored at a hand sink. Person in charge had employee remove utensils, place in 3-compartment sink for washing and sanitizing, and washed hands before returning to station. 3-304.12 - Core: In-Use Utensils, Between-Use Storage Predefined Comment: In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection.
