Observed walk in cooler had an ambient temperature of 37*F and food items were observed to be at 37*F. Small prep cooler was also abserved to be below 40*F with food inside at 39-41*F. As per the owner , both units needed freon.

Observed items in the walk in cooler, Cooked/Cooled beans 46*F, cooked and cooled beef 44*F. Cook and cooled Chicken 45*F, Chicken broth 44*F, Watermelon 43*F, Pico De Gallo 43*F. Cold hold of food to be 41*F. Beans were embargoed and discarded, other items placed on walk in freezer and other refrigeration to cool. Observed Pico de Gallo 50*F, Diced tomatoes 50*F, Sour cream 51*F, and shredded lettuce 50*F in small prep cooler along grill line. Items were embargoes and discarded. Advised staff to monitor food temperatures using a metal stem thermometer through out the day. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed walk in cooler with an ambient temperature of 45-46*F. Observed air blowing into unit ranging from 45-51*F. Food items inside unit ranges from 43-46*F. Observed small sandwich prep cooler along grill line with an ambient temperature of 50*F using a max/min thermometer. Equipment must be maintained to keep food at 41*F or lower. Owners contacted refrigeration repair company to repair. Repair men appeared on site during inspection. Temperature Control for Safety foods were embargoed and discarded, or rapidly cooled to 41*F by placing in other refrigeration units. Equipment repaired while inspection was being conducted. Temperature in unit was starting to drop while on site. Will complete a reinspection to verify walk in cooler is able to keep food at 41*F within 24 hrs.
