Inspector's notes
3-door cooler in kitchen had the following TCS items measuring an internal temperature of 49-50'F: shredded cheese, half and half, heavy whipping cream, ranch dressing, and blue cheese dressing. Per person in charge internal temperature of food in cooler had not been verified since previous day. As it was unable to be determined how long TCS foods had been out of temperature they were embargoed. Ambient air temperature of cooler measured 51.6'F with min/max thermometer. Person in charge will have other non-TCS foods moved temporarily. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

3-door cooler in kitchen measured an ambient air temperature of51.6'F with min/max thermometer. Brought to attention of person in charge who will schedule to have cooler serviced. Establishment has a walk-in cooler in bar area that can temporarily be used for store TCS foods. Do not store TCS foods in 3-door cooler until they can be held at 41'F or lower. Corrective Action: Correct prior to re-inspection.
