Predefined Comment: TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. Corrective Action: Corrected at time of inspection.
Inspector's notes
Sliced cheese and egg rolls found in reach-in cooler near fryers with internal temperatures of 45-50*F. The ambient temperature of the cooler was 47-50*F. PIC stated the items were placed in the cooler around 8:00 AM today. PIC discarded the cheese and egg rolls. Chicken and tacos were also in the cooler but had an internal temperature of about 42*F and were moved to the walk-in for cooling and continued cold holding. Temperatures verified with PIC's and inspector's calibrated probe thermometers. The reach-in cooler will not be used for cold holding TCS food items until it is repaired or replaced and able to maintain an ambient temperature of 41*F or below. Alternate nearby coolers are available for continued operations. Corrective Action: Corrected at time of inspection.
