Inspector's notes

On roller grill, hot dogs, corn dogs, and Tornados measured an internal temperature of 107-111'F. Per person in charge items had been placed onto the grill approximately 3 hours prior. As food had not reheated to 135'F within two hours it was embargoed. Reviewed reheating process with person in charge. Commercially processed TCS food items must be rapidly reheated to 135°F within 2 hours prior to hot holding. Corrective Action: Corrected at time of inspection.
