Inspector's notes
Observed sliced ham and tuna salad with an internal temperature as measured using a probe thermometer of 45°F inside of the walk-in cooler. A min-max thermometer was placed into the walk-in cooler and allowed to stabilize for 15 minutes. The ambient air temperature reading on the min-max was holding at 39°F. The air temperature coming off the fan inside of the walk-in cooler according to an IR temperature laser was 38°F. The person in charge reached out to a technician to look at the walk-in cooler. The sliced meats and tuna salad were placed in a shallow container to a depth of less than 4 inches to cool back down to 41°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

OC re-inspection conducted with the manager Angie S.Inspection report emailed to store email and manager.Per manager, upper management stated that they are not going to fix any of the items from previous report. She also said that according to management, the backflow is OK and doesn’t need to be changed. Inspector explained the difference between an ASSE 1022 backflow device (currently installed), to an ASSE double check valve assembly which is required per code. Manager was provided inspectors contact information to discuss to answer any questions that upper management may have.Reinspection will occur on 9/11/23:Manager was informed that a $240 re-inspection fee could be placed on account.Please be advised that the New Business Permit Application fee includes one initial inspection and one follow-up inspection.
