-- Observed lids for teas and other beverages being stored on mobile rack directly under an insect control lamp. No visible contamination observed. Reviewed MCESD requirements for insect devices with the person in charge: devices used to electrocute, stun, or trap flying insects shall be designed to retain them within the device and must be installed so they are not located over food preparation, food contact, or ware washing areas to prevent contamination. -- Sliced tomatoes placed in unrefrigerated prep line drawer with time as a public health control documentation missing, and an internal temperature of 68°F using probing thermometer. The tomatoes had a "use by" date of 5:10 AM 1/7/25. Per PIC, the tomatoes were removed from cold holding and placed on the line approximately 3 hours prior to the inspection. Requested the sliced tomatoes be properly timed stamped at the time of inspection. Corrective Action: Corrected at time of inspection.
