Fryer oil buildup observed on floor below main grill. Dust buildup observed on fan blowing in grill area. Please clean these areas in a manner and frequency that prevents buildup of debris. Corrective Action: Correct prior to next routine inspection.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. - Shake mix in shake machine found with internal temperatures of 42-52*F with the colder temperatures being near the rear right corner and the higher temperature being the furthest away from that corner. PIC stated the mix was added into the machine around 6:00 AM today and discarded the mix. Breaded chicken in drawer cooler below the grill found with internal temperatures of 40-51*F with the right side of the container having the warmest chicken. Other items in the cooler were all found to be at 41*F or below. PIC stated the chicken was put in the cooler around 20-30 minutes ago and moved it to the walk-in for cooling and continued cold holding. PIC will monitor the drawer cooler and ensure it is able to maintain 41*F or below throughout before placing TCS items in that drawer for cold holding. The shake machine will not be used until it is repaired/replaced and able to maintain the mix at 41*F or below throughout. Temperatures were verified with PIC's and inspector's calibrated probe thermometers. Please ensure cold held TCS items are maintained at 41*F or below. Correct By: Corrected At Time Of Inspection
