Observed cold brew coffee in progress stored at room temperature (70*F). Cold brew process for room temperature requires a variance with Environmental Services. The following options are available to stay in compliance with Cold Brew. 1.Apply for a Cold Brew variance with Environmental Services Or 2. Keep product at 41*F or below for maximum of 7-days. Operator was instructed to temporarily discontinue Cold brew process until applied and approved for variance or stay within parameters of 41*F for maximum of 7days. Operator was instructed to discontinue and discard product since this is no longer safe for consumption. Operator proceeded to discard ~5lbs of cold brew at time of inspection. Contacted permit holder to follow up on questions regarding new subcontractor taking over operations. Ownership is not changing, current permit is in good standing and not set to renew until 2/29/2024. Reviewed results of most recent Routine Inspection conducted on 9/19/2023. As establishment has not changed any aspect of the facility or equipment, and has not sustained any damage, no OC or other inspection required prior to beginning operations. Prior to restarting operations, ensure that all equipment continues to function properly and contact this Department if there are any concerns. Reviewed menu and confirmed that current permit class and seating are correct. Updated contact information. Operations will start sometime after 11/01/2023. Permit will be aged to 12 months of operation starting 1/01/2024 and permit will receive 2 routine inspections during the 2024 calendar year.
