The Person in Charge shall be a CFPM and is required to be onsite during the hours of operation. This certificate must be visible or readily accessible and kept at the establishment for all inspections. Corrective Action: Correct prior to next routine inspection.

Raw chicken stored directly over tomatoes and apples in the reach in cooler. Raw ground turkey and raw ground beef stored over cheese, margarine, and hummus after being delivered over the reach in freezer. PIC relocated all food items to proper locations. Ensure that food items are protected from cross contamination during storage, preparation, display. Corrective Action: Corrected at time of inspection.

PIC was unsure of when the items were opened or made and discarded-see embargo form. Ensure that ready to eat PHF/TCS foods are properly date marked for use within seven days and are disposed of when date mark/expiration date has been surpassed. There is excess blood-like liquid on the bottom of the reach in cooler in the kitchen area where the raw meat items are stored. PIC stated that bottom of the unit would be cleaned. Ensure that equipment is cleaned frequently enough to preclude accumulation of soil residues. ** The presence of food debris or dirt on equipment may provide a suitable environment for the growth of microorganisms which employees may inadvertently transfer to food. Corrective Action: Correct prior to next routine inspection.
