Food containers of cut watermelon by the facility found in walk-in cooler with date marks of 7/16 on red/Wednesday stickers; containers of commercially processed lychee found with dates of 7/25 (blue/Monday) and 8/5 (black/Sunday). Per food employee, the date represents the day the product was received and the colored day sticker represents the day in which the product was processed by the food employee. After reviewing with the food employee, it was determined the date of preparation of the watermelon would be 7/26. The lychee was misdated by an employee and corrected at time of inspection. TCS food to be clearly marked to indicate the date or day the food shall be consumed on premises, sold, or discarded when held at a temperature of 41*F or less for a maximum of 7 days. The day of preparation shall be counted as Day 1. • TCS food prepared and packaged by a Food Processing Plant that does not meet the criteria to be exempted must be clearly marked at the time the original container is opened and is held for >24 hours to indicate date/day the food shall be consumed on premises, sold, or discarded. o The day the original package is opened counts as Day 1 o The day or date marked by the operation may not exceed the mfg.’s use-by date if the manufacturer determined the use-by date based on food safety ------------ Food employee provided date of discard to watermelon at time of inspection and corrected dates for lychee containers.
