PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Per PIC, foods had been in in danger zone for less than two hours. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit or put on ice to rapidly cool to 41°F .at time of inspection. Corrective Action: Corrected at time of inspection.

Containers of TCS foods (i.e. - ham, turkey, roast beef, sliced tomatoes, pepper jack cheese, cheddar cheese, and American cheese) found in wall food prep cooler and food prep cooler across found with foods at internal temperatures of 49*F-50*F. Internal air temperatures of units at time were 50*F. Cold holding of TCS foods must be held at 41*F or below. Provide proper cold holding of TCS foods. --------- Per PIC, both food preparation units were at proper cold holding temperatures and increased in temperature within the last two hours. PIC moved all food containers from both improperly working food preparation units to walk-in cooler for rapid cooling. Do not use food preparation units to house TCS foods until units can maintain foods at 41*F or below. Correct By: Corrected At Time Of Inspection
