Walk-in cooler had the following TCS items measuring an internal temperature between 50-53'F: cooked noodles, leaf lettuce, tofu, raw shell eggs, fish sauce mix, peanut sauce mix, salad sauce, tenderloin sauce, stir fry sauce, and broth. Ambient air temperature measured 50.9'F with min/max thermometer. Per person in charge temperature of food in cooler had not been verified since the previous day. TCS foods were embargoed. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
